When writing classical music for the piano, what are the best scales to use while keeping it interesting? What I mean is a scale of C major would blend nicely with a E or G and even an A, however I would like to know what would contrast nicely when you have a E flat minor scale and a F sharp major.

The scales of G, for example Pomp of Circumstance; Eflat, Bflat and C are some of the most interesting scales to use when writing classical music. These are commonly used in famous composers like Beethoven and Mozart.
